Fabian Saldana is the owner of the 2 hectare farm, El Mirador, in the La Palma community of the Chirinos area. The area of Chirinos is known for being one of the best quality coffee areas in all of Peru, due to it's varieties and high altitude.
El Mirador sits at 1750masl and is mostly planted with pache, but he also has some bourbon and caturra. Pache is a mutation of typica which is rarely found nowadays, but it is prized for it's intense acidity and delicate cup profile, which it exhibits magnificently in Fabian's coffee.
In recent years Fabian has put a lot of effort in to raising the quality of his coffee, with great success.
