Ihuamaca is a village in the district of San Ignacio, which sits around 1800 masl. The main varieties grown there are Caturra, Typica, Bourbon, Mundo Novo and Catimor. Ihuamaca is very well regarded locally for quality, since a number of cooperatives have been working in the area for some years, slowly improving the infrastructure and helping farmers to invest in their farms. However, many of the producers have become discontented with the cooperative structure, as they feel they're not fairly rewarded for the quality they are now producing.
This past season, Falcon started to work directly with producers in Ihuamaca. This blend was created from day lots from a number of producers in the locality, and we have been impressed by the quality and the distinct cup profile that this coffee carries.
