Jose Maria Gomez has been involved in coffee his whole life and has had his own farm for the past 7 years growing coffee organically. As he seeks to improve the quality of his coffee there have been recent investments in his knowledge and understanding to help improve the quality of the coffee production from cultivation through to processing.

Once harvested the coffee is depulped and then left to ferment for 14 hours before being washed 4 times with water to remove the mucilage. After this the coffee is then transferred to a parabolic drier where it is dried for 6 days on raised beds.
